The new French salt Jozo Fleur de Sel

The new French salt Jozo Fleur de Sel

It is rarely possible to draw a strict line along the border where salt water meets fresh water in nature. In many cases, it is a complex ecosystem with moors, lagoons, meadows, reeds and other treasures. And this universe is a real paradise for flora and fauna. But to our delight, on long dry, sunny summer days in the South, fleur de sel, or "salt flowers" in French, blooms here. A layer of salt crystallizes on the surfaces of standing salt water, forming flower-like formations on the surface. If carefully removed and dried, it can be placed on the table and give food a much more pronounced sea flavor than traditional sea salt can create. Like all flowers, these are also given to us by nature only a few months a year, in certain regions, and their collection is manual labor, which is why fleur de sel ranks among the most exclusive and expensive salt products in the world. That's why the French, who discovered this unique natural wonder, also proudly call it "sea salt caviar".
